In this hands-on class, participants will learn how to create a refined classic Christmas log (Bûche de Noël) built on traditional French techniques. The recipe features a light joconde biscuit, a smooth praline pastry cream, crunchy caramelized nuts, and a silky praline buttercream for finishing.
Students will work through each component step-by-step , from preparing sponge and cream to rolling, assembling, and decorating to produce an elegant and well-balanced holiday entremets.
Learning outcomes:

Prepare a joconde biscuit with correct texture, flexibility, and bake level suitable for rolling.

Make a stable and flavorful praline pastry cream, mastering tempering and thickening techniques.
