About our classes
This specialized 18 hours course is designed to take your knowledge and appreciation of Japanese sake to new heights. Our goal is to allow you to confidently explore the diverse method and technics to produce sake, recognize different grade, categories and style. You will taste 18 sakes and will explore different possibilities of food pairing.
Course objective:
By the end of this session, you will be able to:
- Understanding the rice growing cycle and the different rice varieties
- Mastery of rice polishing techniques and preparation
- Identify and understand of the primary ingredients used in sake production
- Describe different steps, and various types of koji production in sake-making
- Understand the different fermentation processes & styles in sake production
- Recognize categories, grades and styles that sakes can be classified into.
- Read Kanji used in Sake Labels
- Known recommendations for serving & tasting sake as well as storage and serving it with different international food
